Double Chocolate Cookie Dough Bites


Ingredients
¾ cup cooked black beans
1 ½ tbsp maple syrup
1 ½ tbsp nut butter (I used an almond-cashew blend)
1 tsp vanilla extract
pinch of salt
2 tsp almond milk
2 tbsp cocoa powder
150g of dark chocolate, for coating
Combine all the ingredients except the chocolate in a food processor and transfer to a medium-sized bowl.
Taste the batter to decide if you need to add more sweetener, then roll it into teaspoon-sized balls. Place the balls on a plate or tray lined with parchment paper, then put them in the freezer.
Gently melt the dark chocolate over a double boiler. Take the dough out of the freezer and stick a toothpick in the center of each one. Dip the balls into the warm chocolate and tap the toothpick on the edge of the bowl to get the excess chocolate off. Return them to the parchment-lined tray.
Repeat this until all of the balls are coated in chocolate. Send them back into the freezer to harden for about 15 minutes, then store in the fridge. #vegan #chocolate
