Ayurvedic Quinoa Kitchari


2 cups vegetable broth
2 cups water
3/4 cup quinoa
3/4 cup red lentils
6 cloves garlic, crushed
1 cup yellow onion, chopped
1/2 cup carrots, chopped
1 cup frozen spinach
1 cup frozen broccoli
1/2 t turmeric
1/4 t cayenne pepper
1/4 t ground ginger
2 t coconut aminos, Braggs aminos or soy sauce
1 T lime juice
2 t toasted sesame oil
sea salt, black pepper, to taste
1/4 cup fresh cilantro, minced

In a medium-sized stockpot, add water, broth, quinoa and lentils. Bring to a boil and immediately turn heat down to a simmer. Add in garlic, onions and carrots. Cook for 15 minutes. Add in spinach and broccoli. Cook for another 10 minutes. Add remaining ingredients, cook for another 5 minutes, adding more liquid if necessary. Serve warm. #vegan
